Maxwell ~ "I'm 2 Months"

 Maxwell, you are showing so much personality these days. For only being 2 months you sure love to her your mommy's voice. Everytime I hold you and talk to you in the bouncey your are forever laughing at me. Am I really that funny? or just a cute mommy to you?
 
Your very alert it amazes Daddy and me everyday.
 

Your are continuing to grow like crazy. My auntie sent me a email the other day and she wrote "what are you feeding him muscle milk." I started to laugh out loud to myself! The combination of breast milk and formula must be doing you good.
 
But you really are such a boob man. I don't know if there will be a night that you can go to sleep on your own without falling asleep on the boobie. Haha..you are really messing up these delicate things :)
 
You had your 2 month check this week and Dr. Frankel says, "your doing wonderful." So truly blessed! It's always wonderful to know your baby is doing great and there are no real issues. Music to my hears!!
 
Weight: 12 lbs 4ounces. (25th percentile)
Height: 23.8 inches (50th percentile)
Head Circumference: 15.8 inches

In the Closet: 0-3 months

Diapers: Size 1

Grub: Breast milk/ Formula

Sleep: Sleeping through the night! Only because mommy holds you all night. (we need to change that buddy)
 
New Activity/Development: Cooing, batting at toys, starting to hold things

Loves: watching TV with daddy and sisters, being outside, taking walks, sleeping, and the boob:)
 

We are having so much fun with! Having girls and now my little boy this has really been a whole new thing for me. I just love how you love your mommy. Such beautfiul moments and loving all of it.

Your sisters, Daddy, and I are so much in love with you. There are plenty of kisses to go around. Everyday we are getting to see you change. I love all your smiles you do and so very glad God blessed me with such an adorable little boy like you.

Now can you keep those blue eyes of your PLEASE PLEASE...I want a child with blue eyes and why not start with you....come one lets keep those babies!!

I know its not my choice but seriously their beautiful don't take them...

 
Well I hope you all have a fabulous weekend ahead of you...
 
We will be BBQing it up with lots of beer and well no Tequila this time until the whole boobie thing is gone...
 
But we are thorwing a "Beach Day" theme party on Monday with the cousins and family. It's the last day the weekend before the kiddos start school. YAY!!
 
I been on the search around my house putting beach theme things together for the party. Trying to make this budget friendly guys. I'm sticking to my guns!! No spending lots of money.
 
And so far so good.
 
Thanks to Pinterest, its great ideas and lots of free printables my "Beach Day" at the Villalpando's will be a blast...

Perfect Chocolate Chip Cookies

Summer is slowly coming to end!
 
And what that means...
 
fewer lazy days with my Sidnee girl and baking cookies!! 
 
If you know me well I'm obsessed with cookies, well pretty much anything chocolate. Since I remember, my mom has been baking chocolate chip cookies. I'm obsessed with her cookies. Nobody's cookies compares to my mommy's! These cookies come out perfect everytime and they are beyond delicious. My husband who hates "sweets" (is that possible) love these! Over the summer Sidnee and I have been making them pretty much every week. It gives us girlie time and well time to fight over the beater with the delicious cookie dough hanging off it. I mean really who doesn't love some good old cookie dough. This one beats them all. As you see in the pictures that is all the cookies we got to bakin" the other day. Well lets just say there was suppose to be more however, Sidnee and I went at it with the cookie dough. It was just one of those days!
 

Chocolate Chip Cookies
 
1/2 Cup Sugar
1/2 Cup Brown Sugar (packed)
2/3 Cup Shortening
1 Egg
1TSP. of Vanilla
1 1/2 Cups of Flour
1/2 TSP. Baking Powder
1/2 TSP. Salt
1/2 Bag of Semi-Sweet Chocolate Chips
 
Cream the shortening, sugar, brown sugar, egg, and vanilla together. In a bowl mix the flour, baking powder, and salt together. Slowly add in the flour mixture. Toss in the half the bag of semi-sweets and mixture with a spatula.
 
Bake at 375 degree for 8-10 minutes. I usually bake them at 8 minutes because I like my soft and moist. If you like your cookies more well done then do it for longer.
 
The key to delicious chocolate chip cookies is shortening. I'm not a butter girl in cookies it just doesn't do it for me. Sorry you butter lovers! But trust me once you try these cookies you will never use butter in your cookies. I PROMISE this mama doesn't lie....just keepin it real people!

Getting School Ready!

School is almost here and my baby girl will be in her 2nd year of Preschool.
 
I was so bummed that she wasn't able to attend Pre-Kindergarten this year because of her birthday month cut off date.
 
Off course my only child that will be able to attend Pre-K will be my Maxy boy...
 
Dang cut off I'm so mad at you, you cost me more money now. Another year of paid Preschool! How could you. Ok..over it, well maybe, but truly I am bummed.
 
So with all that said, I was out on the search for a new cute backpack for Sidnee's second year in Preschool. I searched on Amazon and came across these backpacks made by Belvah.
 
Aren't they just adorable?
 
 I got down to these 4 to choose from. I was in love with them all . It's so fun picking out backpacks. They have differerent sizes small, medium, and large. What is nice is, you not only could use them for school, but dance class, daycare, sleepovers, or pretty much for anything.
 
I decided on the medicum lime green and pink backpack. The first backpack shown.  I wanted something bright and fun! And that is what she got. It arrived in the mail a few days ago and its perfect and totally well made. Makes me a happy girl. The price of the backpack was 23.99 which I thought wasn't bad.

Chicken Salad Sandwiches

I wanted to share with you my favorite chicken salad recipe with you. My cousin made these awesome tea sandwiches for my baby shower and I feel in love.
 
I love a good old hearty sandwich.
 
It sometimes can be difficult to cook for my family because my hubby is man of steak and beans (go figure haha), my girls are beyond picky, and well Max he's just a boob man!
 
So whats a girl to do when she just wants a plan old chicken salad sandwich, eat it all herself.
 
Well not exactly, I make them all try it and get to see there reaction and if its a NO go, well than that means more left overs for me.
 
Why do they have to be so difficult? Just Eat it Family! I been working on the hubby for 5 years...
 
there truly is more to life than steak, beans, rice, tortillas, and chili...
 
I mean don't get me wrong the way to go is Mexican food...its so delicious but really if I did eat it everyday I would probably not be quite the size I want to be, and for that I mean being a fatty aka fat ass..sorry guys but lets be real.

enjoy you some so so fairly healthy sandwiches
 
 
Chicken Salad Recipe
 
1-1 1/2 pounds of chicken
2 Celery Stalks, chopped
1/3 cup Onion or 2 Green Onion
1 1/2 to 2 cups of grapes halves
1/2 cup mayonnaise
1/2 sour cream
juice of a lemon
salt to taste
pepper to taste
white sandwich bread (crust cut off if you like)

In a bowl mix sour cream and mayo. I sometimes mix a little half and half to make mixutre a little lighter. Boil chicken for 30 minutes. Drain water and let chicken cool before you cut up in pieces. Cut onion, celery, and grapes. Mix the grapes, onion, celery with mayo mixture. Lastly, add in the cooled chickien pieces and mix. Salt and pepper to taste!

And there you go an awesome, simple, and delicious chicken salad.

Have fun making it give it your love and add whatever you want.

I sometimes add slivered almonds and sometimes I'm in the mood for more onion, celery, and mayo. It's just whatever I'm feeling or may be in my pantry that day.

Sidnee's 1st Dance Rectial


 A couple weeks ago Sidnee got to perform in her 1st dance recital. Oh my gosh, was it the most adorable thing you would ever see. My baby girl did such an awesome job. I am so proud of her!
Before we headed to the recital I thought I would snap some cute photos of this cutie.
I thought I would work my DSLR camera like I was a pro and own it. Haha!

Watch Me GROW...

Wow, we made it to one month I can't believe it!

I even managed to get pictures of you for a whole month.

 How did this happen? I really don't know. I probably did it in my sleep! I'm just glad the pictures didn't come out blurry.

Look at that adorable little boy. He has blue eyes and blonde hair. Where did that come from? I'm praying the blue eyes stay. I need one blue eyed baby!

 Well I also manage to take your one month pictures with my DSLR camera but don't have time to edit them or actually pick out the good ones. Who has time for that. So why not just post the ones from my iphone there just as cute.

Right? 

Look at him grow! It's amazing how they grow in just one month and how much alert they are. I love the unintentional smiles. Don't you wonder what they must be thinking? I do!!

I'm so in love with you, you have no idea. You are truly going to be a mommy's boy I don't care what your daddy says. Your my buddy and cuddle bug. I still can't believe to this day God blessed with a beautiful little boy like you.

I can't stop looking at you! I think I kiss you a million times a day. I just can't get enough.

We have had long nights since you been born. I indeed have another child who will not sleep on there back in the bassinet. So here I am again holding you in my arms with my boppy around me all night long. Yeah! I know my doctors gives me shit to. I can't help it these darn kiddos won't sleep by themselves.

What is a mommy to do? I need sleep too!! Most nights I think I wake up in the rocking chair holding you and your still on my boobie. I don't know about you but breastfeeding wipes me OUT!!

It's over a month now and your still not sleeping along. Either in my arms in the rocking chair or maybe a couple hours in my bed with me. HELP!!
As for getting you on a schedule well that is just not happening. It's summer time, 3 kids, 2 in diapers (I see a lot of poop daily, haha), a 4 year old that is in swimming lessons, soccer, and dance how do I manage a schedule. I will get there I truly will one day.
It's just been a little over a month were getting there buddy.
Who cares about the schedule, Right?
Well Max I love you and am enjoying every minute holding you. Even if you always want to be held. Before you know it those times will end so I am taking it while it's there.
Can't wait to watch you grow and spending all the moments we can together.
Your sissy's sure love you! We have a lot of taking turns on who will hold you next in our house.



They are just precious!!!! These three melt mommy and daddy's heart.

Cake Time, Let's Celebrate

This summer is flying by and yet I feel I really haven't accomplished nothing but maybe having a baby. No for real I haven't done nothing that I wanted to. Bummer!!!
 
But we did do something...well maybe something little
 
celebrated Tony's birthday with a fabulous cake that was made by Sidnee and myself
 
 
You all know I love to bake sweets becasue I'm so very sweet...hahaha I'm retared or just slightly sleepy. I turly love to bake especially when it consists of something chocolate.
 

For Tony's birthday we baked him a Chocolate Butterfinger Cake
YUMMY!!!

I knew I wanted to bake a chocolate cake for him, but thought I would add a crushed candy bar of something to go with it. Headed to the store butterfingers were on sale. So that was it!

Here's the recipe cause your going to love it.
 
A chocolate moist cake, homemade chocolate buttercream and smashed up butterfingers who could wrong. I couldn't stop eating it, it was just that good.
 
 
 
Chocolate Butterfinger Cake
 
Cake:
A box of Betty Crocker chocolate devils food cake
3 eggs
1 1/4 whole milk
1/2 vegetable oil
1/2 sour cream
1 box of choclate pudding
 
I used a cake box mix and basically all I did was follow ingredients on box but substituted water for whole milk, added a box of chocolate pudding powder mix and a half cup of sour cream, this will make for a very mosit cake. I pretty much put both those ingredients in all my cakes. You will never go wrong! Moist, Moist, and more Moist.
 
Put all in ingredients in an electric mix and mix away. Pour batter in two 8 inch pans and bake according to directions on the box and depending on your oven. Make sure when checking with toothpick that crumbs are still left on it. If it comes out clean its been baked to long!
 
Chocolate Buttercream
 
2 sticks of unsalted butter
1 box of powder sugar
1 teaspoon of vanilla
3/4 cup of cocoa powder
2-4 tablespoons of milk
 
cream the butter and vanilla in a mixer, than alternate milk and powder sugar. Lastly, add in the cocoa powder and mix for a about a minute until its all creamed together and smooth.. If you feels its to thick for your tasting add more milk. I added a little more milk for this one because I knew I need to frost the cake and it would be easier for me
 
Your will need 1 BUTTERFINGER or maybe 2 (crushed)
 
Once cake is baked and cooled, take out first cake place on  plate. Cover cake with a layered of buttercream and some curshed up butterfingers. Place other cake on top. And frost away, covering the entire cake. Add crushed butterfigner on top and YAY your all done.
